2 large cucumbers (about 1 lb), thinly sliced
1 pint cherry or grape tomatoes, halved
½ small red onion, thinly sliced
¼ cup apple cider vinegar (or white wine vinegar)
2 tbsp olive oil
1 tbsp sugar (or honey/maple syrup)
½ tsp salt
¼ tsp black pepper
Optional: 1 tbsp fresh dill, parsley, or basil
