5. The Two-Stage Bake
Pour the thick batter into the prepared loaf pan. Smooth the top and press the reserved pecan halves gently into the surface.
Place in the 400°F oven for exactly 10 minutes.
Without opening the oven door, turn the temperature down to 350°F (175°C).
Bake for another 45 to 50 minutes.
Check for doneness by inserting a toothpick into the center; it should come out clean or with moist crumbs (no wet batter). If the top is getting too dark, tent it loosely with foil for the last 15 minutes.
6. Cool and Serve
Let the bread cool in the pan for 15 minutes, then use the parchment sling to lift it onto a wire rack to cool completely. (Cutting it while it's hot will make it gummy!)
