Step 3: Make the Pickling Liquid
In a small saucepan, combine the vinegar, sugar, whole cloves, whole allspice, and salt. Stir gently to help dissolve the sugar.
Bring the mixture to a boil, then let it cook for about 5 minutes. This allows the spices to infuse the liquid and creates a flavorful pickling base.
Step 4: Combine and Chill
Carefully pour the hot pickling liquid over the sliced beets, making sure all pieces are well coated.
Cover the bowl and refrigerate for at least 1 hour. For deeper flavor, you can let them chill longer, allowing the beets to absorb more of the sweet and tangy brine.
